Numero Uno Baerii

Baerii caviar is extracted from the White Sturgeon, a native species of the Siberian rivers. Reaching up to 60 years of age, it weighs 200 kg and can be as long as 2 meters. It takes as long as 12 years for it to reach maturity before harvesting the first roe. Our partners’ farms recreate the natural habitat of the fish, carefully monitoring water quality and feeding to ensure the health and well-being of the sturgeon. This allows for a consistent supply of high-quality caviar that is harvested while preserving wild sturgeon populations.
